Roast carrots with Honey'd Heat

Roast carrot coins spread across baking parchment, glossy with oil and flecked with dark specks of spice, a few browned at the edges.

Carrots concentrate as they roast, so by the end they are sweeter than they started. A blend with heat in it stops that sweetness becoming the only thing on the plate.

Cut them into thick coins, as in the photograph, or into strips lengthways. Either way each piece lies on a flat face against the tray, and flat faces are where the colour comes from.

Ingredients

  • 700 g carrots, cut into thick coins or lengthways strips
  • 2 tbsp olive oil
  • 2 tsp Honey'd Heat
  • Flake salt

Method

  1. Heat the oven to 200°C fan.
  2. For coins, cut the carrots about 1.5 cm thick. For strips, halve them lengthways, then halve again if they are thick.
  3. Toss the carrots with the oil and spread them flat in one layer on a tray, not touching.
  4. Roast coins for about 25 minutes and strips for about 30, turning once, until the flat faces have taken real colour.
  5. Scatter the Honey'd Heat over and return for 5 minutes.
  6. Salt, and serve.
