Guacamole with Smoke and Flame

A wide white bowl of roughly mashed guacamole with a fork resting in it, on a wooden board in a working kitchen, a plate of spice-rubbed chicken beside it.

Smoky guacamole usually means one of two things: charring the ingredients over a flame you may not have, or a spoon of chipotle in adobo, which brings garlic and onion along with it whether you wanted them or not.

Smoke & Flame carries its own smoke. Smoked paprika, chipotle and guajillo do the depth, natural hickory smoke powder does the top note, and beet powder is what gives it that dark red colour rather than anything artificial.

Dust it over the top rather than stirring it all through. You want to see it, and you want the first spoonful to be smokier than the last.

Method

  1. Halve and stone the avocados and scoop them into a bowl.
  2. Add the juice of the lime, a good pinch of flake salt and 1 tsp of the Smoke & Flame.
  3. Crush with a fork. Stop while it is still lumpy — a smooth guacamole reads as a dip, a coarse one reads as food.
  4. Pile it up rather than spreading it flat, so there are ridges for the dust to catch on.
  5. Scatter the last 1 tsp over the top and serve with bread.
